Very elegant velvety texture and rich flavours. Displaying secondary flavours of field mushroom and brioche that overlay the lychee fruit, that further builds complexity and persistence. The Pinot Meunier also adds the delicate, soft and luscious characters, with firm natural acidity providing a backbone for the longevity and vibrancy of this wine.

Ed and his team have found the best sites all around the cool climate Tasmainia to source fruit for their incresing number of wines all of which are excellent expamples of how traditonal method sparkling wines should be made.
